Shrimp Scampi with Paesano Sauce Recipe!

These will be done separate therefore, we will give you the recipe to make shrimp scampi and the recipe to make the paesano sauce and you will just have to combine them. Enjoy!


Shrimp Scampi

  • 1 pound large raw shrimp, shelled* and de-veined. You can also keep the shells, that is up to you.

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons butter

  • Salt and pepper.

  • 2 Tbsp minced garlic

  • 1/4 to 1/2 teaspoon red pepper flakes. If you want more spice you can add more. The measurements here are more for flavor, so don't be scared, lol.

  • 1/2 cup white wine, We will recommend a dry white wine such as a Sauvignon Blanc

  • 2 tablespoons finely chopped parsley

  • Freshly ground black pepper to taste

  • 1 tablespoon lemon juice

First step is to saute the garlic, pepper flakes and butter. Start with high heat then lower to medium. Make sure the garlic doesn't burn.

Add the garlic, and make sure the ingredients coat the them. Add the wine right after. Make sure the wine and everything else is coating and coming together. This will all be in high heat until the wine boils. After 3 minutes turn the shrimp over. Cook for one more minute and add the parsley, lemon juice, salt and pepper. Most of the wine would have diluted/evaporated but you should have very some of the mouthwatering sauce it created. Take the shrimp and put on top of the paesano sauce (recipe for paesano sauce is below, keep reading) *Note, the picture has parsley in the middle not mixed, but you can do it whichever way.

Paesano Sauce

- one tsp of minced shallots - ½ tsp of garlic, minced with a dash of salt to extract the garlic’s oil - 1 Tbsp of light extra virgin olive oil -Cook in a sauté pan until you start smelling the aroma and the shallots look translucent - Add 1/4 cup of white wine and ½ a lemon’s juice until you have middle sized bubbles at medium high flame to medium flame - Add 1/2 cup of heavy cream and lower the flame to medium low until the sauce start showing low to medium bubbles - Cut cubes to 2 oz of butter and smother them in AP flour and add to the sauce at low heat and stir until completely incorporated into the sauce - whisk one egg yolk in a separate cup or bowl with some of the sauce to create a liaison, and then add it to the sauce and distribute across the sauce. The sauce should start showing a velvety sheen - Add salt and pepper to your taste - Prepare your shrimp scampi style with the recipe we gave you and add on top of your Paesano Sauce! ENJOY!
